Vegan Grain-Free Bechamel

Hi everyone!

I promised a recipe each week and here it is! I’m experimenting more on cooked preparations at the moment (also because unfortunately I don’t yet have all the equipment I had available in Italy for Raw food).

It’s spring here in Melbourne and the temperature is nice and mild, the sun comes and says hello quite often and the produce available at the local Prahran farmers markets is amazing! I always try to get organic, though some veggies such as avocados don’t have to be strictly organic because they have a shell that protects them from any pesticide.

Anyway lets get to the yummy stuff! This is a super easy dish to prepare that looks and tastes amazing. It’s seasonal and healthy!

Ingredients for 2 people:


- Half a cauliflower

- 30g (¼ cup) of extra virgin coconut oil

- 30g (¼ cup) of chickpea flour (better if sprouted)

- 500ml of macadamia nut milk

- A couple of pinches of nutmeg

- A couple of pinches of pink Himalyan salt and pepper

Preparation:

Steam the Cauliflower for 15 minutes untill soft but firm, you can add some other veggies to the steamer while you are doing that. I added carrots and broccoli.

While waiting for the cauliflower to cook, turn on the oven and start preparing the bechamel.

In a small pan pour the milk and let it heat on low fire for a minute. Then add the coconut oil and mix untill it’s melted. Add the flour, salt, pepper and nutmeg, and start mixing with a whip until it gets creamy. Turn off the fire as soon as it starts getting creamy or it will solidify.

Once your cauliflower is steamed, take a baking pan that can fit it and sprinkle it with a little bit of salt and avocado oil (just a few drops). Cover the cauliflower with your bechamel and sprinkle with nutmeg.

Bake in the oven for 10 minutes 180°C on grill + fan.

Take your beautiful dish out (and sprinkle with some red berries), serve with some colourful veggies and enjoy!

TIP: never cook your veggies for more than 25/30 minutes, you might lose some of the nutrients they store.
